The axes used in carving spoons and bowls tend to have what is known as an asymmetrical bevel. This means that the two planes of metal that make up the cutting edge of the axe are at different angles. For a right-handed person such as me, the left hand bevel of the axe is flatter than the right handed bevel. This means when you are hewing (as I'm doing in the photo to cleanup a face on a piece of oak for what will become a medieval style bowl lathe) the axe blade will bite into the wood with the flatter bevel against the wood.
